Taco Casserole, Rice and Broccoli Casserole, Crusty Beef Casserole

TACO CASSEROLE          (Continued)

Prepare chili according to directions using beef, tomatoes and kidney
beans. Spoon into shallow 2 quart casserole. Sprinkle with chips and
cheese. Bake at 350 degrees for 15 minutes or until cheese melts and
casserole bubbles. Just before serving, top with lettuce, tomato pieces
and olive slices. Serves 6.

 RICE AND BROCCOLI CASSEROLE                               Janet Jackson
 2 pkg. frozen chopped broccoli
 2 c. cooked rice, cooled, long
    grain
 1 can cream of chicken soup
 1/4 c. milk
 1 can water chestnuts, sliced
    thinly
1/4 c. onion, chopped fine
1/4 c. celery, chopped fine
4 Tbsp, margarine
1 c., 1 small box 8oz., Velvetta
Cheese, in small chunks

 Saute onion, chestnuts and celery in margarine a few minutes. Add
 cooked rice and stir often. Place a layer of broccoli in bottom of greased
 casserole. Then the rice mixture. Then pour cream of chicken soup.
 Then another layer of broccoli. Last add cheese over the top. Bake 30
 minutes in 350 degree oven.                               *

 CRUSTY BEEF CASSEROLE                                     Sherry Rumble

 2 lb. lean hamburger
 1 medium onion, chopped
 3 cans Chef Boy Arde spagetti
   sauce
1 lb. shredded cheese, I use colby,
any favorite may be used
1 pkg. very,very thin noodles
Lawry's Seasons salt, very impor­
tant, don't omit

 Brown hamburger and onion, add sauce. Boil noodles, drain. Layer in
♦greased, baking dish in this order: hamburger, noodles salt and cheese
 as many times as you want. Best to end with cheese for browned,
 crusty topping. Bake 350 degrees for one hour. Can be made ahead,
 frozen and baked at a later date.

 6-8 chicken breasts
 2 tube of Ritz crackers
 1 8oz. sour cream
4 Tbsp, poppy seeds
2 cans cream of chicken soup
1 stick melted oleo
