Texas Sheet Cake, Granny Cake, Gooey Cake

TEXAS SHEET CAKE         (Continued)

Mix flour and sugar in bowl. Bring margarine, shortening, cocoa and
water to a boil and pour over flour-sugar mixture. Add buttermilk,
eggs, soda and vanilla. Mix well until bubbles form. Pour in 10xl5-inch
jelly roll pan. Bake in hot oven, 400 degrees for 20 minutes. While
cake is baking, mix icing in same pan, margarine and cocoa mixture
was boiled. Bring all to boil but vanilla and powdered sugar. Add
vanilla, then powdered sugar and beat well. Pour over cake while cake
is still warm. Nuts may be added to icing if available. If 1 cup minia­
ture marshmallows are also added to icing, it is called Mississippi Mud
Cake. *1 Tbsp, vinegar may be added to a cup of whole milk to get
the buttermilk. Works well.

GRANNY CAKE                                              Gladys Mason

2 c. flour
11/2 c. sugar
1 tsp. soda
1 tsp. salt
2 eggs
#2 can crushed pineapple and
juice
1/2 c. brown sugar
1/2 c. nuts, chopped

Topping:
1 c. sugar
1 c. Milnot
1 stick margarine
1 Tbsp, vanilla

Mix flour, 11/2 cup sugar, soda, salt, eggs and pineapple. Pour into
greased 9xl3-inch pan. Sprinkle brown sugar and nuts over top. Bake
at 350 degrees for 40 minutes or until golden brown. 5 or 10 minutes
before cake is done, bring topping ingredients to a boil and pour over
warm cake. Do not take out of pan until completely cool. This is a
deliciously moist cake.

GOOEY CAKE                                                 Annette Lacy

1 box yellow cake mix
1 stick melted butter
4 eggs
1 8oz. cream cheese, softened
1 box powdered sugar
1/2 c. chopped pecans or walnuts

With mixer, beat cake mix, butter and 2 eggs. This mixture will be
sticky. Spread into greased 13x9-inch pan. Then beat cream cheese, 2
eggs and all but 2 Tbsp, powdered sugar until smooth. Pour sticky
mixture and sprinkle with nuts. Bake at 350 degrees for 35-40 minutes.
Cook and sprinkle with remaining sugar.
